Ingredients

  • 30 g cilantro
  • 20 g green onion
  • 30 g mint
  • 30 g parsley
  • 30 g dill
  • 6 egg
  • 15 g butter
  • 30 ml heavy cream

Sause

  • 200 g thick yogurt
  • 1 clove of garlic
  • 30 ml olive oil
  • 10 g mint

Instructions

  • The main ingredient here is spinach, so don’t hesitate to take more. Wash all the greens, remove the stems, remove the white part from green onions. Carefully chop everything and mix with beaten eggs, two tablespoons of heavy cream and salt.
  • Melt the butter in a frying pan, pour in the herb egg mixture. As soon as the eggs begin
    to hold their shape, turn the green omelette over with the help of a large flat plate. A couple more minutes - and kuku sabzi is ready. The main thing is not to overcook it, and keep emerald green color and vitamins.
  • For the sauce press the clove of garlic with a press, mix it with yogurt, salt and olive oil. The final touch: sprinkle your omelette with chopped mint leaves.
