Ingredients

  • 3 eggs
  • 50 g cream cheese
  • flax or sesame seeds (optional)

Instructions

  • Preheat the oven to 170°C/338°F, and put baking paper on a baking sheet. If necessary, grease it with a little butter. Prepare a mixer or immersion blender and 2 bowls.
  • Carefully separate the egg whites from the yolks. Whisk the whites in a dry, ideally clean bowl until they form firm peaks. I usually set a timer and whisk for 3 minutes.
  • Beat the yolks with farmer cheese until combined and slightly lightened. If you want to make tortillas with some taste, you can add your favorite spices.
  • In several steps, mix the yolks into the whites with a spatula until they are combined. The mass will drop a little, but it will remain airy.
  • Spread 9 mounds of future tortillas on a baking sheet. It is best to use an ice cream spoon or a measuring spoon for 60 ml. The dough will spread out by itself during baking; there is no need to flatten it. You can sprinkle tortillas with salt or spices before baking. If you want to add mozzarella or hard cheese, sprinkle it on almost ready-made tortillas.
  • Bake on a medium level for about 20-25 minutes, until golden brown. Cool off the grill and enjoy.
