If working with dough isn’t your thing, or you suddenly don’t have an oven at home, no problem. You just need a blender to make this quick keto dessert. A blend and you have an amazingly delicious (fatty and healthy!) lime and avocado mousse ready to go.

Ingredients
Nut crumbs
- 50 g almond flour
- 50 g pistachios (ground)
- 30 g erythritol
- 1 tbsp vanilla
- 15 ml coconut oil
Cream
- 140 g avocado
- 200 g mascarpone
- 50 ml heavy cream
- 50 g erythritol
- 30 ml coconut oil
- 140 g lime (juice or zest)
Instructions
- Prepare dessert glasses: these are enough ingredients for 4 regular cups/wine glasses or 6 champagne glasses.Prepare the limes: slightly press each fruit and roll them around on the table to squeeze out the juice more easily. Peel off the top layer of green zest and divide into two pieces – one will go into the cream, and the other for decoration. Squeeze out the juice.
- Prepare a layer of pecan crumbs: mix all the dry ingredients with the coconut oil and vanilla extract and evenly distribute them over the glasses, leaving a couple of teaspoons for decoration.
- Peel the avocado and remove the pit. Beat it with a blender and room temperature mascarpone. Add the cream, erythritol, liquid coconut oil, the juice of two limes and the zest of one lime. Continue beating them together until you have a perfectly smooth consistency. Put the cream evenly into glasses and sprinkle with the remaining pecan crumbs and reserved lime zest.Refrigerate the finished dessert for at least an hour before serving.
