Some products are very difficult to make friends with. For me, one of these was tofu and I still can hardly believe it is good for keto vegan dessert. For a long time, I tried to find an approach to bland tofu. And finally, I have something for you. FYI. Tofu is a soybean curd with a very neutral taste and wonderful texture. Contains a lot of protein. There are hard tofu, soft or silk tofu, and tofu with the addition of eggs.
So, today we are having a chocolate parfait made of silk tofu – a nutritious and delicious vegan dessert without eggs, cream, or butter, rich in iron and calcium.
- 250 g silk tofu
- 45 g erythritol
- 20 g cocoa powder
- 5 g instant coffee
- Before cooking, remove tofu from the package and leave for 10 minutes to get rid of excess water.
- In a cup, mix cocoa powder, coffee, and sweetener, add 4 tbsp boiling water and mix till all the ingredients dissolve. Bring the syrup to a boil over low heat, turn off the heat, add the contents of the vanilla pod and cool down.
- I used Balinese coffee: it is very finely ground, and I did not even have to strain it. Espresso or instant coffee are also good.
- In a blender, mix tofu with the chocolate syrup until evenly creamy. Put the mixture into parfait glasses and cool in the fridge. Garnish with strawberries and chocolate beans before serving.
