A friend told me how to cook avgolemono, a healing Greek soup with chicken.
She began from afar: “An English doctor, forgot-her-name and can’t-find-a-link, got a coronavirus at a conference in the States. She cured herself at home! 60 years old, cheerful blonde, looks like a well-groomed 45, but that’s not the point…The anti-COVID treatment was: bed rest, fresh air, a lot of water, and magical Greek soup with chicken broth and a lemon, well-known natural antivirals. So here is the recipe.”

Ingredients
- 1 l chicken broth
- 2 egg
- 120 g lemon (1 fruit)
- greens (for serving)
Instructions
- Put the chicken broth on a boil and start whisking the eggs in the pan.
- When the broth is already warm, carefully pour in the eggs and start stirring. If you bring it almost to a boil, the egg will go in threads. If it’s up to 60-70oC/140-158oF, it will just become cloudy gently, for me it’s preferable.
- Add lemon juice, generously. Serve with chopped greens and a circle of lemon with skin for flavor.
